3 c. flour
2 tsp salt
2 tsp baking powder
1/2 tsp baking soda
6 cloves garlic
2 chilies
1 c. yogurt, whisked
ghee/oil/butter (for brushing)
1. In a medium bowl, combine the flour, salt, baking powder and baking soda. Stir in the garlic and chilies. Add yogurt and stir until the dough forms a ball.
2. Knead the dough, dusting with flour if too sticky, for 2 to 4 minutes until smooth. Brush with ghee/oil. Let it rest, covered for 15 to 20 minutes.
3. Divide the dough into 4 equal parts (or possibly 8). Shape each part into a patty (like a hamburger) and brush with ghee/oil. Cover and set aside for 15 to 20 minutes.
4. Preheat a pizza stone on a lower rack in a 500F oven. With a rolling pin, roll out a dough round into a circle, 7 or 8 inches (if 4 parts) in diameter, or a tear shape, 1/4 in thick. Place one piece at a time directly on the pizza stone and cook, covered for 1 to 2 minutes until the underside is dark brown and crispy and the top side puffs up. Flip the bread and cook for 1 minute or until golden brown spots form. Remove from the stone; brush with butter and keep warm in aluminum foil.
5. If making 4, cut in half lengthwise, and serve.
